What is Santa Maria-style barbeque?

The history of Santa Maria BBQ can be traced back to the early 1800s in the Santa Maria Valley on the central coast of California, when the first American cowboys-known as vaqueros-would host large cookouts after each cattle roundup for their friends, family and fellow ranchers. The menu and methodology remain very similar to the early days, although around 60 years ago local residents began to use skewers to string the meat over the coals of a hot red oak fire, built with bits of wood and coal from the red oak tree, exclusive to the valley.

The meat is seasoned perfectly and slowly cooked over the fire to seal in the flavor. It is then served with freshly prepared salsa and toasted sweet French bread to soak up every last savory drop of the natural juices produced in the process.
